Adlai and Mushroom Risotto

About the Dish:

Elevate your dinner experience with a creamy adlai and mushroom risotto. This comforting dish is rich in flavor and texture, making it a delightful option for a cozy evening.

Ingredients:

  • 1 cup uncooked adlai
  • 1 cup sliced mushrooms (any variety)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Arborio rice
  • Vegetable broth
  • White wine (optional)
  • Parmesan cheese, grated
  • Fresh thyme leaves

Instructions:

  1. Cook adlai according to package instructions.
  2. In a separate pan, sauté onions and garlic until softened.
  3. Add sliced mushrooms and cook until they release their moisture.
  4. Stir in Arborio rice and cook for a couple of minutes.
  5. Pour in vegetable broth gradually, stirring continuously until the rice is creamy and cooked.
  6. If using, add a splash of white wine and let it cook off.
  7. Fold in the cooked adlai, grated Parmesan cheese, and fresh thyme.
  8. Serve warm, garnished with additional Parmesan if desired.
