Adlai Stuffed Peppers

About the Dish:

Spice up your dinner with these adlai stuffed peppers. A hearty and savory filling of adlai, black beans, and spices is baked to perfection inside sweet bell peppers, creating a wholesome and satisfying meal.

Ingredients:

  • 4 large bell peppers, halved
  • 1 cup cooked adlai
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook adlai according to package instructions.
  3. In a large bowl, mix cooked adlai, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  4. Spoon the mixture into halved bell peppers, placing them in a baking dish.
  5. If desired, sprinkle shredded cheese on top.
  6. Bake for 25-30 minutes or until peppers are tender.
  7. Serve warm for a flavorful dinner.
